Today is the first Thursday of the month which meals one thing -- MEAL SWAP DAY!!! The playgroup I attend recently started this amazing activity and it's quickly becoming my favorite day of the month. It all started when Lindsey decided to host a soup swap. Everyone brought six frozen quarts of soup and we swapped them, each leaving with six new frozen soups. It was life changing for me... for six meals I didn't have to plan, grocery shop, or cook - just thaw the soup and dinner is served!! It got me thinking about how amazing it would be to do this once a month. Everyone in our playgroup agreed and we had our first swap last month.
Here's how it works: Everyone doubles a recipe that you'd normally make in a 9x13 pan. You then split the meal into 4 8x8 pans, freeze them, and bring them to playgroup. We then each tell what we made and a little bit about it. We draw numbers and the person who got #1 picks one meal, then #2 picks, etc... until everyone has chosen their first meal. Then (per Justin's idea) we go around again, this time with the last person picking first. We continue until everyone has their 4 new meals. If you eat one meal a week, it lasts you a month until our next swap.

It works out great because it's super easy to double a recipe and just split it into 4 meals - way easier than making 4 separate meals. Plus, I don't know about you, but I'm always getting into slumps with meal ideas so this way you get to try new meals and get tons of new recipes too. It's a win-win!!
Last month I made chicken enchiladas and came home with lasagna, eggplant parmesan, chicken and rice casserole, and Asian chicken casserole. For today's swap I made bruschetta chicken. I can't wait to see what meals I come home with today! Happy meal swapping day!!

I am in agreement that meal swap day is a highlight of the month. And I think we are especially lucky that we have such great cooks in our play group!

What a great idea and it must be such a relief to know you have some of your meals planned for the month!
I love this idea! I would love to eat something that I didn't have to cook once in a while!
